Percent of wheat flour that is industrially processed
Definition
Proportion of wheat flour in a country that is industrially processed.
Relevance
The proportion of a fortified food that is industrially processed represents the opportunity for fortification, due to the presence of modern automation, quality control and quality assurance practices, and lower regulatory monitoring resources required by government. Mills must have a production capacity of at least 20 metric tonnes of wheat flour per day for wheat flour fortification to be feasible.
