Percent of maize flour that is industrially processed

Definition

Proportion of maize flour in a country that is industrially processed.

Relevance

The proportion of a food that is industrially processed represents the opportunity for fortification, due to the presence of modern automation, quality control and quality assurance practices, and lower regulatory monitoring resources required by government. Mills must have a production capacity of at least 20 metric tonnes of maize flour per day for maize flour fortification to be feasible.
